We have not used our paella pan for some time. This seemed like a good opportunity to try Paella Valencia. We were unable to buy fresh seafood, but decided to proceed with frozen raw tiger prawns and frozen mussels. The mussels turned out to be a real surprise. We steamed them as if they were fresh and they opened right up and were delicious when added to the paella.
