I happened to have an issue of the magazine Fine Cooking (which I bought while in Kingston this spring) in front of me and noticed the heading on the cover "Easy-to-cook Chicken Breasts". We had most of the ingredients for "Chicken cutlets with bell pepper ragout". We made a few adjustments and the result was superb!
